Red Aged Miso is aged for 6 months or more. This meticulous aging process results in a miso with a deep, rich flavour profile characterized by savoury umami notes and a distinctive reddish-brown colour.
Shiro Miso is distinguished by its low salt content (about 4.6%) and a subtly sweet taste, achieved through a high proportion of koji rice.
