Cipriani's Carnaroli rice is grown in Casalbeltrame, a small commune in the province of Novara, Piedmont. Its high starch content gives it remarkable hold through cooking: the grain stays firm while releasing the creaminess a great risotto demands, and absorbs flavour without ever breaking down.
